    Decided on a breakfast dinner since I got home late.
    Giant breakfast sausage patties on muffins with fried egg and American cheese.

    Tonite we having sauerkraut "n weenies, mash potatoes and baked beans...

    Baked hake with tomato sauce and peas. Cold water to drink and mandarins as a finishing touch.

    An enchilada casserole

    Using a 6" round cake pan
    3 - 6" corn tortillas
    1 cup red chili sauce
    1/2 pound seasoned ground beef
    1 cup refried beans
    1 cup mild to medium cheddar cheese

    fry the corn tortillas lightly in oil
    put a layer of red sauce in pan
    take one tortilla and layer it with refried beans
    place tortilla in pan bean side up
    place a layer of seasoned beef
    cover with red sauce
    put a layer of cheese
    repeat previous 5 steps
    take the last tortilla and place on top
    cover with red sauce and finally cover with cheese

    bake in oven at 350F till bubbling and cheese browns
    makes enough for two people or one hungry person
    meat, sauce, and cheese can be substituted with your favorite kind

    Prawn omelette with green asparagus. Water to drink and mandarins for dessert. It is already the season for this fruit.

    I'm nowhere near being a gourmet cook, so I tend to keep things simple and take shortcuts. I call it my bachelor style of cooking.

    Chicken Pot Pie

    Ingredients needed:

    1 can of condensed Cream of Chicken Soup
    1 can of Chicken Broth
    1 bag of Frozen Peas and Carrots, or Mixed Vegetables
    1 Rotisserie Chicken
    2 cannister pre-made Pie Crust
    1 tablespoon Corn Starch

    Shred chicken into bit size chunks
    Mix Cream of Chicken soup and Broth and Corn Starch together in a bowl
    Add 2 cups of chicken and 1 cup of vegetables into bowl stir thoroughly
    Get a large cooking dish, place one pie crust on the bottom.
    Fill cooking dish with the chicken and vegetable mix
    Cover dish with the second pie crust
    Trim all excess crust and vent top crust
    Place in a 325F oven for 1 hour or until top crust browns
    Season to taste: Salt, pepper, garlic powder, onion powder, thyme, basil, and rosemary recommended.

    You can vary the amount and ingredients as desired. I leave out the vegetables and add more chicken.

    I make a great Chicken Pot Pie. BUT! Yeah, it is a lot of work.

    Maybe you ought to just buy one of those large frozen pot pies and "fix" it.

    Cut into the bottom crust and add;
    xtra chicken (a drained can of chix breast meat is enough)
    a few more green beans, 1/4 handful of corn and peas each.

    And you have a well filled Pot Pie.

    Well, from last night. I mentioned your Chix Pot Pie recipe to my wife, so guess who had to fix Chix Pot Pie from
    scratch last night?

    Stew! With the tail diced up finely and added in! Adds a nice little "crunch" instead of oyster crackers. Yum!
